I tried finding this, but could not find an answer.

I have a 2015 Genesis 5.0 non ultimate so I have the 8 inch navigation system. I saw my SD card said 2015 Map on it.

So I have 2 questions.

1. Can I download an update from somewhere or will it brick my navigation? Want the latest update possible without ruining the system.
2. What size/brand SD Card is accepted by the system?

Yes, you can download a free update, or you can buy a pre-loaded SD card. Do the update with the engine running (note that it may take over an hour), and you should not have to worry about bricking it. It seems like it is mostly the people that don't run the engine or otherwise interrupt the update that get bricked.
32G is the size card you need. Most likely the one you have now is only 16G.

 
Remember you will leave your new SD 32gb card in after the update. You can download the update to the SD card and everything should go smoothly. The website has instructions to follow.
 
I just did mine on my 2015 with 8" screen. The two comments before mine were spot on. Buy a 32gb drive, install everything with the car running(took about 20 minutes for me) and keep the new drive installed. No issues and the updates are great compared to 10 years ago.

Silly question but I found a 64GB cheaper than 32GB. I see some devices say "Max xxxGB" will 64GB matter for this?

I can't answer that for sure but I would think that it doesn't matter.

Just tried.

Hyundais program will not allow a portable device greater than 32GB. Oh well.

Nope. 32G is the largest that is supported.
