Easy way to end a phone call?

Is there and easy way to end a phone call other than going over to the "joystick" and pressing down to the "end" and then enter?

Yes: press and hold the steering wheel button with the phone icon for a second or two. This works even if the display screen isn't showing the phone page.

To transfer an in-progress call from the car to the cell phone only (i.e. no longer use the car's speakers & microphone... either for privacy or because you're about to park & shut off the car) press the steering wheel MODE button for a moment. Not all cellphone/bluetooth implementations will correctly do this; some may hang up instead.

I'll have to try these two methods which I did not know about.

As for the easy way to end a call, whats so hard about pushing the DIS Knob down to "End"? I find it just as easy as pushing steering wheel buttons.

No one said it was hard...it is just a two step process that requires attention somewhere other than the road. The steering wheel is perfect, but have not tried it yet.
