2018 g80 sport. What do the paddles on the sides of the steering wheel do relative to the rpm and what is the purpose?

Manual shifting. One side up, the other side down. If you are going down a hill and want to downsift to help slow, just tap the paddle.

If you are accelerating fast you can control the upshift. Lower gear = higher rpm.
Once you are just cruising, the trnas will go back to auto mode.
