I just bought this car and was going over the features and can't find anywhere to pause my iPod on the cars controls. And once I am plugged in I cant access the iPods controls either. Did they omit this control on my model?
 
No it does not. The quick guide says that I can use the "cat/folder" button in the down position to do this but the owners manual and actual testing didn't support this
 
Check section 4 of your owner's manual around page 125.

I can operate my 5th Gen iPod with non-tech package controls (cat/folder) but you need to make sure you have a Hyundai iPod cable.
 
I have Hyundai iPod cable, to be clear I have a 2010 with premium package. Does not have shuttle/jog knob like tech package. My quick guide says pushing the cat/folder down will act as play pause function. IT DOES NOT. Owners manual DOES NOT echo the same. On my owners manual page 125 does not tell me what makes my system pause the iPod.

It's not ideal, but you could just hit the power button/knob. When you turn it back on, it should resume where you left off.

Usually you can switch modes (FM, AM, etc) and then come back to iPod and iPod will pick up where it left off. Sometimes it looses iPod postition, but that may be due to other reasons, because sometimes iPod looses position just by stoping the engine and starting it again.
