Is there anyway to keep the temperature display on rather than it timing out after a few seconds?

The only way I know of to do that is with the "Climate" button and who would want to look at that screen all of the time? This is one of the few small things I would've liked changed, too. Like you, I like to see the set temp, too.
 
Had the same feeling going thru the menus today. The temp is on constant display on your mini display in between your speedo and tach.

That's the outside temp, not the user set inside temp. I was talking about the inside temp.

Sorry for not getting back here but as you know life happens :).

I have a 2013 Genesis with premier package but my temperature display doesn't show between the tach and speedometer. The only time it will display is if one changes the fan or temp setting and it shows at the top of the nav display and then just for a few seconds.

The dumb irony is that if you turn the screen off, the HVAC settings display and won't go away.
