19-inch tires?

I'm considering changing my P's model from 21s to 19s once these tires start to wear down but are the performance models still capable of using those? Aren't the brakes larger vs the Advanced?

Never replaced wheels before so I have no idea.
You'll be fine. I have my winter tires for my Performance mounted on 18" wheels.

I changed the wheels on my GV60 Performance from 21 to 19 inches. Be careful - Not all discs will fit due to the shape of the brake calipers. I had to try on 3 wheel options before I found the right one. Now I enjoy reduced (10-15%) power consumption.

Were the spokes hitting the caliper in the ones that didn't work? If not, what was the issue?

The challenge with issues with wheel spokes is that they aren't covered within the usual wheel-sizing specs. You can build in some 'buffer' by selecting a wheel offset and width that would push the outside further out, but there is usually no mention of where the spokes reside. Similar to @Alexandr O , you may just need to test fit some, or go with something that has otherwise been confirmed to work.

When I was buying wheels for my last car, I wanted to move the stock rubber onto the aftermarket wheels, so had to get 19s. I've never had a more difficult time trying to find wheels. The front brake caliper was HUGE - the spokes on some wheels wouldn't clear the caliper, and the drums of others were not large enough and would fit onto the hub.
I learned that the 19" in the spec only refers to the tire mounting surface and the inner diameter of the wheels can vary.

This isn’t an easy question to answer without taking a bunch of measurements.
By choosing a wider wheel and/or one with negative offset, you can push the outside of the rim further away from the caliper - but at some point you go too far and have it sticking out beyond the fender.

The characteristics of all disks (ET, DIA) were identical, but only one of the considered ones came up. Correctly determine the suitability will help only fitting

Went from the OE 20" to 19" (235/55 R19 105V) Pirelli Scorpion AS Plus 3.
Only went about 7 miles home, but I love them! Silent.
I'll be putting a lot more miles on them this weekend (ugh), so I'll have a much better idea how they perform on all kinds of roads, including some unpaved (eek!).

The wheels are the 19" or 20". So yes, when I changed from 20" to 19", it's the wheels that I changed along with the tires. Much different style. I didn't like the Advanced wheel style.

Replacements are Pirelli AS Plus 3, 235/55 R19 105V. Smoother ride, and much, much quieter.
Gained almost 10% mileage on this weekend's trip. Top mileage at 100% SOC - 275 mi. Very pleased with everything about this change.
Worth the cost? To me, yes. To others... maybe. Maybe not.
Bonus, is that the rear-end vibration stopped.

I might just throw out the OE setup. Tires are gone, but you are welcome to the wheels if you'd like. But you have to pick them up.

is your dealer taking deposits for the 2024 model? Although it was introduced this week in Germany and England, there was no announcement of US availability.

Assuming you have the appropriate offset you can safely go down to a 19 inch rims and some 18 inch rims may clear the rather large mono block brembo style front breaks on the performance GV60. Be very sensitive to the offset number. I was going to swap over my relatively new OEM Hyundai 19 inch winters last year winter tire/rims that I had on my Ioniq 5. Sadly With a + 44mm offset even though they fit perfectly on the rear they would not clear the front calipers on the GV60. Probably just 2mm short of clearing the caliper.
The GV60 performance has a +54.5 mm offset with the 21 and 20 inch OEM wheels, your offset range on possible replacements with that size rim is 52.5-56.5, if you go to a 19 inch wheel, OEM offset is +49.5 mm and you can replace a wheel in that size safely with an offset between 47.5-51.5 mm. In Summary don't go below the lower offset range number with your replacement as it probably won't clear the caliper and going much above the upper number may cause undesired handling effects.
 
Since the stock for Advanced is 255/45R20, the comparable sizes are 255/50R19 and 255/55R18. @Looney100 , did you go to 255/55R18 and did you have any issues?

Yes. I went with 255/55/18, no problems at all, but as has been mentioned earlier, you need to be careful that the spokes clear the calipers.
