Air conditioner stops working on long trips

My wife's air conditioning on her 2019 G80 Genesis works fine in and around town. However, on long trips (about 3-4 hours), the A/C stops working at about the 3 hour mark. No cold air comes out and the airflow in general is minimal at best. Once she shuts the car down for an hour or two, the A/C starts working again. Again, for short trips in and around town. Any thoughts or suggestions are appreciated.

Evaporator coil is freezing up
Two possible causes. Thermistor is defective
Low on refrigerant

Going back a couple of years there was a rash of the thermistor problem. Do a search here and you will find them. In my case, it was a leak in the coil.
 
Until you get this fixed, you can reduce the chances of it happening by pressing the recycle button.

Easy, once you get to it behind the dash some place. I've not done it and don't know how to get to it.

I've done it. It's difficult (for me) to describe exactly how it is done, but it's not that difficult to do. You empty out the glove box, remove the stops and the damper arm. Let the glove box flop open all the way, then you can reach in behind the dash and get to the sensor and twist and remove it and reverse to replace it. I think the sensor is about $20. However, it is easy to test the existing one first to see if it is really the problem. Put it in your freezer, and after a few minutes, it's resistance should go to 27K ohms or higher. (It will be about 12K ohms at room temperature.)
The sensor looks like this:

Only the white connector and a little bit of the black part is visible when it is installed.
