If my headlights are set to auto in the daytime do they have a delay so that if I enter a tunnel they will not immediately turn on?

They will not immediately turn on when you go into a dark tunnel. The purpose of the delay is keep them from constantly going on and off in different lighting situations. They will not immediately turn off either when you exit the tunnel, although the turn off delay "may" be shorter (not sure).
 
When I pull into my dim garage, the lights go on within a couple of seconds each time. I'm about halfway in when the lights do their adjustment sweep on the wall in front of me. That's pretty quick.

Overhead lights in a tunnel could make a big difference and possibly delay the lights or prevent the lights from coming on.

There is a necessary hysteresis built into the system to prevent constant blinking on and off, but this does not necessarily affect the initial turn on.
 
I can say that when I drive on US 75 in Dallas every morning and afternoon and pass under every cross street (as the highway is lowered below street level), my lights will automatically go on every single time, even if just driving in a dim area for 5 seconds. It's that sensitive.
 
The delay is adjustable, I'm guessing in all 2015+ models but certainly in the 2015 v6 w/tech.

5, or even 3 seconds is not immediately. Also, I have found that the light sensitive switch is more sensitive when the car has stickers on the windshield (for license plate renewal, inspection, etc). I have noticed this because I have a removable parking sticker for where I work. Works a lot better when there is not sticker anywhere on the windshield.

Also, I am assuming that the OP has 2009-2014 Genesis.

Yeesh, I was being generous by saying 5 seconds. It's more like 2-3 seconds when on a highway.

I have a similar gripe about mine. I've noticed that in the late afternoon just driving through a shaded area will turn mine on momentarily. When I run out of shade they switch back off. Driving where there's lots of trees that time of day they're constantly on and off until the sun finally sets. I usually will just not use the "auto" function. It's way too sensitive to suit me.

While I agree it would be be nice to configure the sensitivity (my old G35 could do this), I don't mind if they come off/on for tunnels, shade, etc.... my only concern is the unnecessary turning on of the ballast for the HID lights. I imagine that it prematurely ages it. That said, I would suspect tests have been done on the lifespan of these things.
