Hyundai Bluelink shutting down service

Doubt it. Would need a fairly expensive hardware change and the numbers of potential customers diminishes every day.
You can always get a remote starter installed to keep that feature. Figure $200 to $500
 
The 2015 and 2016 Hyundai Genesis are not affected by this.

No, you can't. You are looking at a post that is a few years old and referred to the 2G shutdown. Since then, 3G has also shutdown, and your 2015 was 3G.

Think this is bad, I bought a new 2012 BMW 535i and after 2 years, the connected services (BMW equivalent Bluelink) I got a notice that the service would be discontinued because 2G service was ending. Imagine BMW installed a 2G modem in their 2012 models and 4G was already out.

Years ago we did some work for customers in the auto industry. Anything we did was for the model year at least four years ahead. By three years, everything is finalized and no more changes. The modem design was probably a good idea in 2009. Electronics moves much faster than the auto industry.
