Offset question

I am considering a 2nd set of wheels for snow tires. From what I've found, the stock wheels on my 2011 4.6 are 18x7.5 with a 39mm offset. If I were to go with an 18x8 rim, what offset would I need? Also, would that extra 1/2 inch make any difference or cause any problems?

Also, if I go with 17" rims, which I would assume would be 17x7.5, what offset would be required?

The offset would be the same but you must also clear the 4.6 brakes.
 
Wouldn't a wider rim have a different offset? or is it measured from the center of the rim and the the only difference is that an 8" rim would stick out a 1/4 inch further?

Sorry for the stupid question, but I'm new to this.
