So I have a champagne gold 2011 4.6 and I love it -- however I've always wanted a white car so tell me why I should or shouldn't have mine painted in the OEM pearl white...

Well, you probably shouldn't if you cant afford it. You probably should if you want to.

What does it cost to change the color? You will have to include the sills, inside the trunk and hood.

Not worth it, in my opinion. Sell it and find one that you like.
 
The car would have to be gutted to do it right, unless you want an Earl Scheib type of paint job.

Good decision. To change the color to white and make it look OEM would cost about $12,000.00 which would include disassembly and reassembly of car.

How about two reasons?

1. The gold is far more distinctive. Keep it.

2. Buy a second car in white - you can get that anywhere - I sometimes buy two of something when I can't make up my mind - How about a nice Jaguar Type F?

Good choice, I have both colors and still prefer the champaign color... I addition to being more distinctive, I can tell you the 'gold' is darn easer to keep clean, while the white is 'delicate and pretty' , it is rather hard to keep clean for more than couple of days (originally wanted a black R-Spec, but the Mrs insisted :))...

Why not just wrap it??

Not permanent like paint.
Way cheaper.
Remove it when you sell it.
