Eco makes the pedal mushy
Normal is acceptable
Sport changes the shift points higher. On the city streets at about 35 mph, normal you'd be in top gear, Sport will hold you back a gear or two for a faster response if you hit the gas.
I think Sport mode idles a little higher to minimize turbo lag too.

I’ve noticed zero difference between any of them in normal driving, have not tried driving like a bat out of hell in sport mode yet

Wife did take a 55mph curve going 73mph and the car tracked extremely well

I don't think it makes any difference in performance (0-60) etc. What it does, it raises the shift points (RPM) or hold it in lower gears longer. But it does nothing to raise the converter stall speed.

Eco allows for gas saving coasting mode. Sport definitely tightens things up. I live in the Sierras and always use sport on hills and curves for better handling and acceleration, Comfort or Eco the rest of the time. 3.5TT, ave 21ish mpg combined, 26 highway.
