So if my fob is in the left pocket and my wife puts her purse on the consul we have to manually change. If I unlock the car to put stuff in the trunk so that is first, then she is going to drive - - - - -

Correct. If both are carrying their respective fob, how does the car know who is driving?
I don't think car's are that smart, yet. However, I did test the Mercedes MBUX voice command that knew who was giving the command (driver or passenger) and adjusted their seat temperature.
In our house only the driver carries their fob. With our vehicles that had this user recognition, it was the first person that walked up to the driver's door that set profile . It's like selecting the driver's memory button on the inside door remotely.

I believe you're overthinking it. In such scenarios, you'd simply push the appropriate preset button on the door like you currently have to now when you switch drivers.
Also, no reason there couldn't be different settings in vehicle preferences like there are for auto locks and headlamp delay. Those who don't like personalized fobs could always disable it. Although a couple leaving the house in the same car and both carrying fobs for it seems rather unnecessary. My wife and I never do that. In the very rare event that we've switched drivers during an outing, it was easily rectified by pressing the appropriate preset on the door.

Wow, I don't know how to answer that. I don't decide what is in my wife's handbag or pockets.

Have a Nissan Murano with paired keys. it usually chooses the person who opens the driver door. I suppose because closest. If one of use uses our fob then it uses that one. Nice feature wish or GV70 had is.

I haven't looked too hard. I was acutally looking just now. I have looked in the printed manual and haven't found anything...hence my question if it's even possible.
While in general I agree with the RTFM advise, the GV60 manual is about as long as Finnegan's Wake and as understandable.
