Question about iPod/USB functionality with iPhones

2014 Genesis R-Spec here. I've had the car since 2015 and have always used an Android phone connected via Bluetooth. I recently started using an iPhone 7 (old, I know) and notice quite a bit of sound quality improvement when plugging in through USB vs playing through Bluetooth.

The only issue is the phone only wants to play music through Apple Music when connected to the car via USB. So I can't play music through Spotify, Google Music, Plex, etc. It plays for about 1 second in that app, then goes back to Apple Music and starts playing from there.

I have a feeling it's because the car is looking for an iPod, which is probably why it works with Apple Music. But is there any way around this?
