How do I delete and add preset stations ?
 
I think you push and hold the preset.
 
Just press the add over the one you want to change. The old one will be deleted and the new one will be there.
 
How do I disable Sirius entirely?

Can't be done AKAIK. I've seen that request before, and the answer came back that there is no way to skip the mode.
