How to select music in Bluetooth audio mode

When I select Media on the center console, my Genesis (2015, V6 Ultimate) picks up my iPhone 6's Bluetooth signal and the car audio receiver starts streaming music from the iPhone.

I can pause, play, and skip tracks, but can't figure out how to change to another playlist, (or even see the playlist). I can't figure out how it is picking the music...so I will be listening to a relaxing Bach prelude one moment and the next selection will be Mariah Carey singing "What I want for Christmas".
 
Can't speak to iPhone but with my Android, it plays music in the order the phone's music play has them arranged. So if I am in my "Recents", playlist, it will play the songs in that list in the order I have them. If I switch over to "All Music", it plays them alphabetically by title as that is how the music player I am using has them arranged. If I select Random Play in the music player on the phone, it will randomly play songs in the selected playlist.

I have not see a Bluetooth streaming solution that supports playlists.

When connected to Bluetooth (or via USB), the default input when Media is pushed is to stream whatever is playing on the phone. Push Media again and then you can pick the specific app (Pandora, iTunes, etc...). That's when you have the appropriate interface.
 
Thanks Monolith. What you write makes complete sense.

However, on my iPhone 6 plus, I don't have a "Recently Played" playlist or a "Play All" option, so I am still not sure how it is selecting the music tracks to play.

The Bach prelude piece is in my "Adaigio" playlist. The Mariah Carey piece is in my "Divas" playlist. How they played right after each other is beyond me, unless it is selecting on the basis of last name ("B" in Bach before "C" in Carey), although if it was doing that, it would have played pieces by Brahms and Beethoven before Carey.
